DETOX ROASTED PEPPER & TOMATO SOUP

If you are doing a detox then this is a great soup for lunch. This is something I do occasionally. I follow Medical Medium detox plan & this is one of this recipes with my own little twist! This soup is very light but also very nourishing. 

You will need:

FOR 2 CUPS OF SOUP

1 Celery stalk 

1 Tomato

1 Red Pepper 

1/2 Onion 

1/2 teaspoon Oregano

Water 

Salt & pepper

2 Basil leaves 

Method:

Cut the celery stalk, tomato, red pepper & onion into chucks & place on a baking tray. Toss on top the salt & pepper (even though you can leave this out if you are doing a cleanse) also toss on top the oregano. Roast in the oven for 15 mins at 350 degrees until slightly golden. 

Place all ingredients in a blender, add water & blend. I like blendtec as it purees everything so well & makes it super smooth! 

You can add a bit of olive oil even though its not recommended if you are doing a detox!

Then place in a bowl top with the basil leaves & enjoy!
