VEGAN STRAWBERRY & APPLE CRUMBLE WITH CASHEW ICE CREAM

This is so delicious & one of my favourite comfort foods! I love this whenever I need to feed my sweet tooth!

You will need: (6 servings)

Filling:

1 cup Strawberries

1 Apple 

2 tablespoons cup Coconut sugar 

1 teaspoon Vanilla extract 

1 teaspoon Cinnamon 

Topping:

1/4 cups Gluten-free oats

1/4 cup Coconut flour 

1/3 cups Coconut sugar 

1/4 cups Melted coconut oil

1 teaspoons Cinnamon

1 teaspoons Vanilla extract 

1/3 cup Pecans 

Cashew vanilla ice cream to serve & a sprinkle of cinnamon on top 

Method:

Preheat the oven to 350 degrees. Chop the apples & strawberries into small chunks, place them in a oven safe pan then cover them with the coconut sugar, vanilla extract & cinnamon. 

In a mixing bowl, mix together the topping ingredients then sprinkle them over the apples & strawberries in the pan & place in the oven for about 15 mins until top is golden brown. Serve with cashew ice cream on top!
